Peter: There are people who say to you, well, you’re not going to put butter on that are you?
Julia: If you leave things out you don’t know what you may be missing. When I was working on my last cookbook I was interviewed by Arthur Schwartz in New York, and he had just been interviewing a diet doctor, who suggested no fat at all. And Arthur looked close at this man, who didn’t look very healthy, and noticed that he was covered in dandruff! Because he wasn’t eating any fat, he had no normal amounts of bodily oils. You’ve got to eat a little bit of everything.
Peter: You encourage people to enjoy things like, hollandaise, and pâté… There’s been a real stir with the health craze that’s going on now.
Julia: But in sensible amounts. You should have everything. You should know how real food is supposed to taste.

Thank you for that tip. I will make sure give him a big smile the next time I see him. Maybe he hasn’t encountered kindness from people on a regular basis. I notice that his meat shop is unusually quiet. People don’t really go there as often as they do with the other ones around. Thanks, thank :D

@missoftheswiss: Nope, I myself haven’t been to Switzerland. My partner has (I think with his family years ago or on his way to a conference. I can’t remember).
